Clean Eating Crispy Tortilla Pizza in 5 Simple Steps!

Pizza is among'st one of those firm favourites! It's the perfect meal to turn to when you want that 'quick and easy' option for sitting down to a good film or some Saturday night takeaway TV. However, it can have it's repercussions when it comes to living a healthy lifestyle...

But! It doesn't have to! There is such thing as a clean and healthy pizza, and I'm going to show you in 5 easy to follow steps, how you can be sat down in front of the telly this weekend with a delicious pizza without the stodge!

Firstly, before we dive into the 5 steps to pizza heaven, here is a list of what you'll need to pull it off.

Shopping List

  • Whole Wheat Tortilla wraps (Size depends on your hunger level)
  • Tomato Puree
  • Mixed Italian herbs (Dried is fine)
  • Garlic
  • Salt & Pepper
  • Balsamic Vinegar (Optional)
  • Lemon Juice (Optional)
  • All Spice (Optional)
  • Fresh Spinach
  • Mozzarella (grated is easier)
  • 1x Chicken Breast (Or more if you love your chicken)
  • Bacon Medallions (Smoked is nice)
  • Mushrooms
  • Peppers
  • Red Onion
  • Knife & Fork (Highly recommended)

So, now you have all your ingredients at the ready, let's get started!

Step 1

Preparation

First off, we're going to need to cook off the chicken. What I found that just adds that extra zing is adding a dusting of allspice, but you don't need this... In fact, if you would prefer a different spice to add in like cajun for example, go for it!

Now I'm sure you know how to cook chicken but the clean way I use is simply oven baking at 200°C (fan-assisted oven) for 25 minutes until golden brown. Then just to be on the safe side, check that the juices run clear before proceeding.

Whilst your chicken is cooking, get your bacon medallions and whole wheat tortilla out and place them in the oven for about 10-15 minutes, just keep an eye on that tortilla near the end so it doesn't end up as a chalkboard!

Step 2

Toppings

So the chicken is cooking away, now it's time to prep the toppings. Gather up those veggies and get slicing and dicing! Cut up your peppers and dice that red onion, slice your mushrooms into slithers and keep all to one side, along with the spinach leaves and your portioned pot of grated mozzarella ready for the stacking process!

Step 3

It's all about that base!

By now it should be about time to empty the oven! So take out the chicken and bacon and put them to one side to cool. Grab that Tortilla base and give it a knock... (did anyone answer? of course not it's a tortilla wrap - but you never know...) Anyway, moving swiftly forward to setting the foundations...

It's tomato puree time! So, what I like to do is add a few bits to the puree to enhance its flavour. You can just use it as it is but I do like to add in a hint of garlic ("yes, it's the lazy one, please don't judge me"), mixed Italian herbs, salt, pepper, balsamic vinegar, and a splash of lemon juice. Mix it all up together with a teaspoon and voila!

Step 4

Let's get stacking

The Veg is prepped, the meats are cooked, and the base is ready to rock. Firstly we need to chop the chicken and bacon into small edible strips. Then place your tortilla base down on a flat surface ready to populate with yumminess!

  1. The first step, with a butter knife or table knife, spread a nice 'edgy' coating of tomato puree onto the crispy tortilla base.
  2. Next, evenly place the spinach leaves on top of the puree, followed by half the portioned amount of mozzarella.
  3. Then spread your chicken and bacon strips over it.
  4. Add your mushrooms, peppers, and pieces of onion.
  5. Finish off with the other half of your portioned mozzarella.

Step 5

Let's bake it!

The preparation is done and you now have an amazing looking pizza, uncooked and causing you to salivate! So let's get this show on the road.

Set the oven to 200°C (I use fan assisted) and bake the pizza for 10-15 minutes just to let all that lovely cheese melt into place. Keep an eye on the edges to avoid burning...

Take it out and serve with a nice bit of salad on the side!

P.s. Because of the thin base, I highly recommend using a knife and fork. Enjoy!
